Hungarian Lentil and Chickpea Goulash

Hungarian Lentil and Chickpea Goulash

Perfect for the cold days of winter; why not try our family friendly meal tonight

 

Ingredients:

1 large onion, finely chopped

1/4 tea spoon of dried cumin

a sprinkle of black pepper

a sprinkle of ground ginger

a sprinkle of ground garlic

400g can chopped tomato 

1 cup of red lentils

1 cup of chickpeas

Method:

Add 3 cups of water to a pan and bring to boil

Add in the lentils and chickpeas cover with a lid turn heat down and simmer until soft (usually takes 20 minutes)

Drain off any excess water and leave to one side

In a separate pan heat and soften the onions usually takes around 3-5 minutes

Add all the herbs and spices to the pan of onions and cook for 1 further minute

Stir in the tomatoes and 1/2 can of water

Add the lentils and simmer the mixture on a low heat until the consistency is thick and glossy

Spoon into serving bowls and enjoy

For the grown-ups in the family try adding a dollop of sour cream
