Winter Vegetable Curry

Home cooking can be so much fun using seasonal vegetables, herbs and spices; why not try our family friendly curry tonight


Winter Vegetable Curry


1 diced onion

½ pumpkin, winter squash or butternut squash, cut into cubes

2 diced carrots

1 diced parsnips

4 chopped large ripe tomatoes

Dash of garlic

Dash of Turmeric

Dash of Cumin

Sprinkle of ground ginger

Handful of coriander, chopped

To serve

200g brown basmati rice


 Sauté the onion in a warm pan until soft

Stir in the pumpkin, carrots, mango and parsnips and cook for 5 minutes further until they also begin to soften

Add in 2 tablespoons water to the pan to avoid sticking

In a separate bowl, blend together 100ml of water with the tomatoes, ginger, turmeric, cumin and garlic until creamy. Pour over the vegetables

Stir in coriander

Cover the pan with a lid and simmer for 30 minutes or until the vegetables are tender

Serving options

Cook the basmati rice following the instructions provided on the pack

Mix the curry with the rice and enjoy!
